In general, the grain can be grouped into three sections by its component parts, from the core to the outer shell:

Bran, also known as chaff, is the outer layer of wheat, consisting of seven layers, covering up to 14.5% of the grain. It contributes to the texture, color, and fiber content in certain types of flour.
The germ is the smallest part of wheat, rich in fats, making up around 2.5%. It is the part from which new shoots develop, containing essential nutrients and oils.
Wheat varieties are categorized based on texture, bran color, and growing season. In general, they can be grouped into three main types:
Hard wheat is the most widely cultivated wheat globally, known for its high protein content, ideal for bread and yeasted baked goods. It features a hard seed with red-brown bran and high water absorption.
Soft wheat has a yellowish-white, tender seed with low protein and water absorption. It’s perfect for cakes, pastries, biscuits, crackers, and cereals.
Durum wheat is the hardest wheat, featuring yellow endosperm with high protein content, commonly used for pasta production.
