The Ahmad Aghaei Pistachio, or the “Long”, shares its origins with the Akbari, being cultivated solely in Rafsanjan. This tall pistachio enjoys popularity in East Asia due to its large size and the whitest shell among all varieties. Sun-dried to enhance its unique characteristics, it features an ivory shell and a kernel varying from light red to purple and green. Slightly longer than the Akbari, its color leans more towards light red and purple. It requires a specific period of winter cold to yield an effective crop.

In-shell Pistachio: This term refers to closed pistachios that have not opened during the growth process. This type of pistachio is used to obtain pistachio kernels. Water-Smiling Pistachios also belong to this category, which become smiling when placed in water.

Pistachio Kernel: The Pistachio Kernel is the shell-less pistachio that is sold for various uses. Both Smiling Pistachios and In-shell Pistachios are used to produce pistachio kernels. In-shell Pistachios are used more for producing pistachio kernels due to their lower price.
