Broken rice consists of rice grains that have fractured into smaller pieces during the milling or drying process. While technically a "by-product," it is a highly valued ingredient in several world cuisines due to its unique texture and superior ability to absorb Flavors.
Grain Size: It ranges from "large broken" (half a grain) to "brewers rice" (tiny fragments).
