For the export and marketing of Ceylon Cinnamon, the Sri Lanka Standards Institution (SLS 81:2021) classifies the cinnamon sticks into several main grades based on their thickness (diameter), quality and nature.
The complete and detailed list that can be used for your grading needs is given below.
1. Continental Grades
These are very high quality cinnamon sticks, with a fine texture, appearance and a clear yellow-copper colour.
Alba: The most valuable and superior grade of the cinnamon family. Very thin, less than the size of a pencil (less than 6 mm in diameter) and has a very mild, sweet aroma.
C5 Special: A premium grade with a very thin (6–10 mm diameter), golden-brown exterior and a smooth appearance.
C5: A standard grade with a diameter of 10–12 mm, the most sought-after in the international market.
C4: A diameter of 13–16 mm. Commonly used for tea and desserts.
C3: A diameter of 16–18 mm, relatively thick but with a good Continental flavor.
2. Mexican Grades
These are medium-sized, thick cinnamon sticks, graded for the Mexican market.
M5 Special: Sticks with a diameter of less than 16 mm, with a good color.
M4: A diameter of 16–19 mm. Less coarse.
3. Hamburg Grades
These are thicker grades, with a preference for flavor and aroma over appearance.
H1: 19–23 mm in diameter. Suitable for home cooking.
H2 Special / H2: 23–32 mm in diameter. Contains slightly thicker cinnamon bark.
H3: 32–38 mm in diameter, the largest grade of cinnamon sticks.
4. Secondary Products
The parts left over or used to make cinnamon sticks:
Quillings: Small pieces of sticks that break off when cinnamon sticks are cut and pressed.
Featherings: Small pieces of thin bark left over when cinnamon bark is peeled.
Chips: The outer rough bark and woody parts of the cinnamon plant. (Commonly used for oil extraction and powdering).
Ground Cinnamon: Natural cinnamon powder prepared by grinding the above-mentioned cinnamon grades.
