Topinambur Sunroot Sunchoke

A Jerusalem artichoke Topinambur is a knobby, edible tuber also known as a sunchoke, which is a North American native plant related to the sunflower. It has a nutty, sweet flavor and can be cooked like a potato, eaten raw in salads, or used in soups. The tubers are rich in minerals, especially potassium and phosphorus, and contain the fiber inulin, which may cause gas but is beneficial for gut health. Jerusalem artichokes are used for food, animal feed, and medicinal purposes. As a food, they can be eaten raw in salads, roasted, or puréed into soups, and they can also be used to make potato-like dishes, crisps, and even baked goods or liquors. For animal feed, both the tubers and the plant's leafy biomass are nutritious
