Our commitment: to the quality of our Sydney Rock Oysters is paramount, and we meet all the requirements of the New South Wales Shellfish Assurance Program and the strict guidelines demanded by the Australian Quarantine and Inspection Service (AQIS). Correct packing: for the shipment of fresh (live) Sydney Rock Oysters is extremely important and we have developed a very strict system we call "The Cold Chain".  It ensures that our oysters are maintained in optimum condition from the moment they are harvested to the final export destination. Important Note:  Our Sydney Rock Oysters are not frozen.  They are delivered to you fresh (live), and they are unshucked (unopened).  This allows you and your customers to enjoy the full, unique flavour of this delightful delicacy.
