At Birch & Waite, we’re passionate about creating premium Mayonnaise, Dressings, Relishes, Sauces, and Desserts in collaboration with our team of chefs from our facilities in Marrickville and Revesby NSW.

For over 30 years, professional chefs have looked to Birch & Waite to provide premium products for the professional kitchen. Although our business has grown, our mission has remained the same- to  provide convenient, premium solutions for chefs and home cooks without compromise on quality. Our products are crafted in small batches, from authentic recipes and with the finest fresh Australian ingredients to taste scratch made.  

Australia is blessed with an abundance of fresh seasonal produce. That’s why our superior quality products start with locally sourced fresh Australian ingredients.

We use regional and seasonal ingredients, without added preservatives, allowing us to create premium Mayonnaise, Dressings, Relishes, Sauces and Desserts that celebrate the taste of Australian produce. This means we support Australian farmers but also that we can produce more sustainably.

Our food philosophy has remained the same Birch & Waite was established over 30 years ago- chef quality products start with sourcing the finest fresh Australian ingredients and batching them with authentic recipes.  

Our unrelenting pursuit of culinary perfection means we craft our products in small batches to ensure they taste scratch made and retain the fresh flavour of the premium Australian ingredients we use.  

Birch & Waite was born from a vision of creating fresh chilled Australian products for the professional kitchen. From the beginning, fresh chilled was at the heart of the development of our premium products- our founders Peter and Willi took 73 iterations to perfect Australia’s first fresh chilled, traditional Whole Egg Mayonnaise- our signature Whole Egg Mayonnaise to this day.  

Our products are fresh chilled to maintain the freshness of the finest Australian ingredients and respect the natural flavour of our Mayonnaise, Dressings, Relishes, Sauces and Desserts. That's how chefs store their Mayonnaise and Sauces that are freshly made and that's how most Birch & Waite products should be stored.

The Birch & Waite Mayonnaise is a standout in the industry. It tastes scratch made – like I made it myself. It’s such a natural product, I can taste what’s in it, as well as what’s not in it!
