Cacao is the type of bean that can really be transformed in dramatic ways in terms of fermentation and drying.

Our products made from chuncho and criollo beans which are original variety of cacao  and have a high fat content and hardly need a sweetener they are so rich in flavour.

Most cacao however is usually a cross between a few different varieties especially the CCN51 are not as sweet.

Fermentation: the boxes are called cajones . so are musical instrument made from wood shaped like a box.The cocoa cajones have  holes in the bottom to let the baba liquid from the mazorcas, (cocoa pods ) trickle out.

Three times in  two day intervals there is a complete change of cajones right to the last beans. This is done rain or shine and the beans are covered excepted when switching boxes.

Product is tested for percentage of fermentation : by opening ten beans and examining the state of fermentation. Seven beans from the ten showing brown not violet would represent 70 % of fermentation. After fermentation , the beans are dried by the sun in solar dryers raqing  twice per day until dry below 8%.
