Held in Mamirolle, in partnership with ENIL de Mamirolle, we welcomed clients from seven countries to explore this essential milk protein. The three-day workshop featured: - Classroom Sessions: Covering market trends and an in-depth understanding of casein properties. - Practical Workshops: Participants created 16 different recipes. - Functionality Tests: Evaluating the cheeses produced. On the final day, participants also visited the Vercel Comté factory to learn about the production, aging, and cutting processes of the Comté production. This workshop allowed participants to expand their knowledge through the expertise of Lactalis Ingredients, particularly in mastering casein functionalities. This training will enable our clients to optimize their products and inspire innovation to better meet market demands.
